Busy Day Recipe

Last week I posted a busy day recipe and got a really good response, so I decided to do it again.  Thursday is becoming our Mexican night (we are having turkey tacos tonight), so I thought I would post another recipe that has made it into my Recipe Book.

My Recipe Book is half empty.  I make a new recipe and we as a family collectively decide whether or not it is worth having again.  This goes for all foods, desserts, main courses, veggies, sides, snacks, etc.  Obviously being a family for almost 20 years has made it interesting and hard to come up with something we all like.  So here is today's recipe.

Spicy Nacho Bake

I got this out of Taste of Home August-September, 2007.

1 lb. ground beef
1 large onion, chopped
1 large green pepper, chopped
1 28-oz. can of diced tomatoes, drained
1 15-oz. can chili beans
1 11-oz. can whole kernel corn
1 8-oz. can tomato sauce
1 envelope taco seasoning
1 package of doritos
2 cups of cheese (your choice)

Brown the beef, onion and green pepper over medium heat until the meat is no longer pink; drain.  (I wash my meat.  Meaning I put it in a strainer and rinse it under hot water until the grease is gone.)  Stir in the tomatoes, beans, corn, tomatot sauce and the taco seasoning.  Bring to a boil.  Reduce the heat; simmer, uncovered for 30 minutes.

In a 13X9 baking dish, layer doritos and half the meat mixture.  Repeat.  Top with cheese.  Bake, uncovered at 350 degrees for 20 - 25 minutes or until golden brown.

Serve with sour cream, spanish rice and it's a whole meal!

To make this quicker, I brown the meat mixture before hand and freeze.  Then just pull out, throw together and bake.  It's really yummy.
