Summer's Over/Busy Day Recipe

Thursday I am still looking for a new theme.  I think this week I am going to post a new or favorite recipe.  I am all about new, easy, fast recipes, especially my family helps make them because I don't get home from work until 5:30 or 6 pm.

I am excited that this week is our last week of summer hours. Technically, yesterday was the last day of leave at 5:30 for me, because this afternoon I have to take Son to the surgeon for his follow up appointment.  Tomorrow, we all get to leave at noon.  

So this week Daughter and Son started dance on Tuesday evening.  So Tuesdays and Wednesdays are going to be the busy nights for us until basketball starts.  So I found a four ingredient recipe on http://www.Kraftrecipes.com  that made a great supper that we all (for the most part) liked.

TEX-MEX TURKEY MAC

2 boxes Macaroni and Cheese
2 lbs. ground Turkey
2 Cups Salsa
1 1/2 Cups Shredded Cheese (divided)

1) Brown the turkey until no longer pink.
2)  Make mac and cheese according to the box.
3) Add cooked turkey, salsa, and 1 Cup of the cheese to the macaroni.
4) Stir and simmer until cheese is melted and everything is warm.
5)  Add cheese to the top.

Foxy made this, but Daughter could have easily made this.  We had bread and butter and a green salad to go with this.  It was yummy.  You can use ground beef and and any blend of cheese you would like.

  2. i do a similar recipe. shells & cheese & rotel or chili ready diced tomatoes instead of salsa.

    its super easy to make and jay & i both love it. hope your family enjoys!
